Ingredients
2 cups organic peanut butter
1 cup Lakanto Regular sweetener
1/2 cup Lakanto golden sweetener
2 egg
1 Tbsp vanilla extract
2 Tbsp almond flour
Mix all ingredients together
Form 1 inch balls, flatten to about 1/2 inch and form a small indent in the center.
Bake 350 degrees for 8 minutes
Melt 1 cup Lily’s semisweet baking chips in the microwave for 40 seconds to start, stir. If need more time do 10 more seconds.
Drop dollops about 1/2 tsp on to each cookie. You can let them cool and set on the counter but it takes forever so I put them in the fridge and they were good to go in 20 minutes.
Store in airtight container. You can keep them out but the chocolate will be really soft so I prefer to keep them in the fridge.
Each cookies is less than 1 net carb!
